The Cuisine::pro Damashiro mini chefs knife is traditionally known as a cook’s knife. It is an all-purpose piece that is curved to allow the cook to rock the knife on the cutting board for a more precise cut.

The Damashiro range features distinctive Damascus inspired blades, inspired by traditional Japanese craftsman and Samurai sword makers. They are characteristic of banding and mottling reminiscent of flowing water.

The Damashiro Japanese steel has been mined in the same Japanese region of Chuo-Ku Chiba since the middle of the last century. Each knife in the Damashiro range has been engineered and tested to meet Rockwell 53 specification for the blade's hardness, and an optimal performance.
