It not only lasts, but also becomes better over time because it seasons every time you cook, forming an increasingly stick-resistant layer known as the patina.

• Like stainless steel, blue carbon steel heats quickly because it's made with steel properties
• Similar to cast iron, blue carbon steel is resistant to high temperatures for a long time, but is more lightweight than a traditional cast iron pan 
• The included stainless steel rack keeps meats off the bottom of the pan, leaving space underneath to roast vegetables or other seasoning items
